There are some foods the people just struggle with making. For me, those foods are toast, fried eggs, and Rice Krispies Treats. Weird, right?
A gluten free chocolate cake is no problem for me. Neither is a homemade dairy free and gluten free funfetti cake complete with sprinkle-covered sides and piped buttercream. And Ive pretty much nailed the most perfect gluten free banana bread recipe you could ever ask for.
But Rice Krispies Treats were the bane of my existence. The struggle was real. It took me batch after batch after batch to finally get it right. WHY ARE THESE SO HARD TO MAKE.
My first ever batch came out so rock solid that you couldnt even bite them without worrying youd break a tooth. Im not even exaggerating.
In my defense, its not a food I grew up eating. You know in those commercials where families are gathered around the kitchen making Rice Krispies Treats around the holidays? That wasnt us.
We gathered around the kitchen making things like clam chowder or chili. My grandfather would sit at the table cutting up the vegetables and wed sit around and chat. Sure, we would make cookies, pies, and bread but my mom was always the one to do the baking. That was more of a solo effort; it was her thing.
Fairy Bread Rice Krispie Treats Allergy Friendly
These fairy bread puffed rice treats are an Aussie twist on the classic Rice Krispie Treats that we all love. A simple ingredient substitution makes this Rice Krispie Recipe both Gluten-free and Dairy-free for those with intolerance.
It was Emmas Birthday this week, so there was plenty of cake, sugary treats and sprinkle coated edibles on offer to celebrate another year passing . We are very fortunate that Emma doesnt suffer from any food allergies, but the same cant be said for many of her class mates.
Just in her class, there are several kids with egg, nut and dairy anaphylaxis, so when sending birthday treats to school, Im mindful to be super careful of what can be shared.
Many parents are now bringing Icy poles, but thats not always convenient with the melt factor, so I made some rice based treats that are gluten, nut, egg and dairy free. I thought that would cover all the main allergy bases and make sure no child misses out on Emmas birthday celebration treats.

I was inspired to make a fun twist on the traditional Fairy Bread triangles we all enjoyed as kids but made them even taster with a gooey marshmallow twist. As the base Ive used a fairly traditional Rice Krispie Treats recipe but swapped out some of the ingredients to make sure it was 100% ok for her classes allergy restrictions.
Is A Rice Krispies Treat Actually A Good Pre
The short answer: It definitely can be. According to Audra Wilson, MS, RD, CSOWM, LDN, a dietitian with the Northwestern Medicine Athletic Training and Sports Performance Clinic, simple carbohydrates are indeed the best source of quick energy for before a workout.
Here’s why simple carbs are such an efficient way to fuel the body: As Klinger explains in her video, they allow energy to go straight to the bloodstream, without getting sidetracked too much in the digestive tract. “We don’t want complex carbs right before a workout, because then more blood goes to the stomach to help with digestion,” Wilson tells Health.
On top of providing quick energy for exercise, Rice Krispies Treats are convenientthey’re shelf-stable , and they’re easy to stick in a purse or gym bag.
That said, a sugary cereal bar isn’t the right pre-workout for everyone. Jeffrey Lucchino, MS, RDN, CSSD, director of Sports Nutrition for UPMC Sports Medicine, says he’d recommend a Rice Krispies Treat before a high-intensity cardio or strength workout, but not necessarily for someone who’s going to take a casual bike ride or walk around the block. “In that case, you could have a balanced snack an hour before, but you don’t need a higher-carb power-packed snack,” he tells Health.

Ingredients for Sunbutter Chocolate Rice Krispie Treats – Dairy Free, Peanut and Nut Free, Soy Free, Egg Free, Gluten Free
3 tbsp. avocado oil, or sunflower oil, or vegan butter
3 cups mini marshmallows
1/2 cup allergen free chocolate chips
4 cups gluten free rice krispies or other gluten free puffed rice cereal

How To Make Dairy Free Rice Krispie Treats
So, lets talk about how these rice krispies go down:
Melt coconut oil. First up, well heat some solid state coconut oil in a large stockpot until nice and liquidy.
Add marshmallows. Next, well add in plenty of marshmallows, along with some vanilla and almond extract, and heat until completely melted and smooth.
Fold in rice cereal. Well stir in a good amount of rice cereal, making sure its all coated with some of that marshmallow-y goodness.;
Spread in a baking dish. Finally, well GENTLY press the mixture into a greased baking dish and then let sit about 1 to 2 hours, or until set.;
Heres The Details On The Allergy
- Eyeballs: I get asked this the most, so lets get down to business: I could only find edible candy eyes that had gelatin in them. If youre vegan, I found this homemade recipe for you. I always say were accidentally vegan since my son is allergic to dairy and eggsbut since he can do gelatin we did the Betty Crocker brand and weve done the Wilton brand too. Or, you could always put the plastic kind on and simply not eat themup to you! (Note, if youre doing veganthen be sure to use vegan appropriate marshmallows, like;Dandies.
- Cereal: Regular and generic brands of rice krispies use barley in all the brands Ive ran across. . Ive found;Malt-0-Meal;&;Erewhon;are great gluten-free substitutions.
- Antlers: Ive unfortunately never found soy free pretzels, hence why these are not considered top-8-free. But, we can do soy. Weve found two pretzels that work for us: Synders Gluten-free Pretzels and Glutinos Preztzels.
- Nose: Since most people do chocolate for this part, and almost all chocolate is not allergy-friendly we simply went with an upside down Skittle, so the S on the front didnt show. You could substitute it for cinnamon candies tooor really any safe red candy that works for your own food allergies.
- Glue: We used honey to make the decorations stick, so itd be clear. If you want, you can use frosting or, use maple syrup or agave if youre doing vegan.

How To Make The Best Rice Crispy Treats
The thing I love most about these rice crispy treats is how they come together with only about 5 minutes of hands-on work. From start to finish, you could be snacking on these treats in just over 30 minutes!
The first thing you want to do is measure out all of your ingredients. These treats will come together fast so you want to have all of your quantities ready to go. This is why I love my Pyrex glass mixing bowl set and mini mis-en-place bowls.
Once ready to go, combine the vegan butter with the majority of the mini marshmallows in a large microwave-safe bowl. Heat for 30 seconds at a time, stirring in between intervals with a greased spatula until fully melted.
Once melted, add in the vanilla extract and stir.
After melting the wet mixture, quickly add in all of the crispy rice cereal and the remaining mini marshmallows. Stir with your greased spatula to coat everything.
Pour and spread the entire mixture into a parchment-lined 9×9 baking dish. I like to spray my rubber spatula with coconut oil and use it to press the rice crispy treats into the pan. You want to make sure you compress them enough that they will hold together, and not so much that they turn into one big brick .
Once nicely shaped in the pan, let the rice crispy treats sit to cool for about 30 minutes.

As far as cakes go, this one is pretty quick to make. Theres no baking involved, just;melting the vegan butter&marshmallows on the stove top. Mix in the cereal and add sprinkles.
Its really that easy! THEN:
- Divide between the three cake pans.
- Let it cool down at least 30 minutes, so frosting wont melt.
- Grab a cake platter and start layering. Cake-frosting-repeat!

Making treats for St. Patricks Day is always fun and today, I chose one of my favorites, Allergy Friendly Rice Krispie Treats. With just a little food coloring and some extra marshmallows, you can turn this easy to make treat into a festive class party treat or just something fun for the kids at home.
One of the main reasons I like to make Rice Krispie Treats at home is because I can control the size. You know those HUGE Rice Krispie Treats you see at the coffee shop? Thats what I love to make-the bigger, the better! Just grab a smaller and deeper pan like these Wilton 8×8 Baking Dishes.
Want to add a little pizazz? I picked out the lucky charms in the Lucky Charms box. You can also cover these in green sprinkles too, the only reason why I didnt do that is because I didnt have any on hand. So, instead, my kids got green unicorns and clover covered hats. Not bad though, right?
I told myself I was going completely sugar free then I got the idea for these and could not resist. Theyre full of sugar-full of it. But, if youre scheduling a cheat day then these are what you are looking for in a treat. How To Make Sunbutter Chocolate Rice Krispie Treats
Add the oil, marshmallows, and Sunbutter to a medium sized pot and begin to mix over medium low heat. After several minutes, all of the ingredients will melt together.
Add the chocolate and stir until melted and streaky.
Fold in the rice krispies, a third at a time. Breaking it up into batches makes it easier to fold together.
Press the mixture into a non-stick cake pan or a lightly oiled/parchment lined baking dish and let set for a half hour.
Cut into squares and serve
Makes approximately 12 squares

The good news is that if youre not into making your own homemade puffed rice, you can easily pick some up from the grocery store.
Thankfully, plain puffed rice cereal is an accessible and affordable ingredient available at most grocery stores and traditional health food stores, including Trader Joes, Whole Foods, and Sprouts.
Ive even found organic, gluten-free puffed rice cereal in the grocery aisles at Target, , so its a fairly accessible ingredient.

Are Rice Krispies Healthy
So as far as the myth goes, no, rice krispies on their own arent fattening unless they are mixed with other fattening ingredients. So rather than being fattening, rice krispies can actually be healthier. Even when compared to other alternative sugar laden breakfast cereals, rice krispies are a much better option.
